What sets WS Chili apart from the rest? Superior ingredients and layered flavors. We use both light and dark free-range turkey meat (for richness of flavor), Rancho Gordo Butter beans (a super-delicious, creamy white bean), and long-simmered homemade chicken stock.
We also use new crop chiles from a small grower in New Mexico which adds a bright, traditional New Mexican flavor and medium heat. Additional warm spices such as unsweetened cocoa and cinnamon, as well as cumin and coriander (freshly toasted and ground), add depth. WS garden-grown oregano, San Marzano tomatoes, and volcanic smoked salt finish the dish. Garnishes include red onion, shredded cheddar, and house-made crème fraîche made with Strauss cream.

Crème Fraîche: Buttermilk, Strauss Cream
- Simmer, stirring occasionally, until hot (be careful not to boil as you don't want the beans to break down).
- Garnish with crème fraîche, cheddar, red onion, and WS hot sauce (if desired :)
