What sets WS Vegetable Chili apart from the rest? Superior ingredients and layered flavors. We use three types of Rancho Gordo beans, new crop chilies from a small grower in New Mexico which adds a bright, traditional New Mexican flavor and medium heat, and volcanic smoked salt. In lieu of meat, we use bulgar for "chew" and nuttiness. Garnishes include red onion, shredded cheddar, and house-made crème fraîche made with Strauss cream. 

ChiliAyocote Blanco Bean, Basil, Beer, Bulgur, Carrot, Cayenne Pepper, Chili Powder, Cumin, Domingo Rojo Bean, Garlic, Green Bell Peppers, Lemon, Mexican Oregano, Olive Oil, Onions, Red Wine, Salt, Tomato, Tomato Juice, Tomato Paste, Turtle Bean           
Crème Fraîche: Buttermilk, Strauss Cream


  • Simmer, stirring occasionally, until hot (be careful not to boil as you don't want the beans to break down).
  • Garnish with crème fraîche, cheddar, and red onion.
