While there is no need for a salad, we love this minestrone with a crusty loaf of bread.

Minestrone: Carrots, Chicken Stock (Bay Leaf, Carrot, Celery, Onion, Parsley, Pasture-raised Chicken Bones, Thyme, Tomato Paste), Extra-Virgin Olive Oil, Flageolet, Garlic, Green Bean, Leek, Onion, Pasta, Pork Sausage, Spinach, Thyme, Tomato, Zucchini.
Pesto: Basil, Extra Virgin Olive Oil, Garlic, Parmigiano-Reggiano, Parsley, Walnuts
- Simmer, stirring occasionally, until hot.
- Garnish with pesto and cheese, and if desired, a drizzle of olive oil.
